This recipe takes the TikTok-famous cottage cheese ice cream trend and gives it a lemon meringue treatment. You can swap the lemon curd or meringue kisses for store bought. If you can only get large meringues, crumble them into pieces before adding them.
Preheat the oven to 225°F. Line a large baking sheet with a silicone mat.
Beat egg whites, cream of tartar and salt together in a stand mixer until frothy. Add the sugar to the egg whites a tablespoon at a time. Wait 15 seconds between additions.
Beat the egg whites on high until stiff peaks form. Transfer the meringue to a piping bag fitted with a star tip and pipe kisses onto the prepared baking sheet.
Bake the kisses for an hour, then turn the oven off and let cool in the oven for another hour. Don’t open the oven door.
Place the egg yolks, sugar, lemon juice, lemon zest, vanilla, and salt in a bowl and whisk to combine.
Cook the curd in a double boiler until it reaches 170°F. Take the curd off of the heat and add the butter. Stir until it melts. Cover and chill for an hour.
Place the cottage cheese, honey, and banana in a food processor. Blitz until very smooth.
Pour half of the mixture into a chilled loaf pan. Dollop the surface with the curd and add a handful of meringue kisses. Using a knife, swirl everything together. Add the remaining cottage cheese mixture and repeat.
Cover the ice cream and freeze for 4 hours. Remove it from the freezer 15 minutes before serving. Scoop the ice cream into bowls and garnish with additional meringue kisses and a lemon wheel. Serve immediately.
