oz spaghetti or dry ramen noodles
½
cup hoisin sauce

Tbsp soy sauce
1
Tbsp rice vinegar
1
tsp Sriracha
½
tsp sesame oil

- 12 rice paper wrappers
1
carrot, sliced into matchsticks
1
green pepper, seeded and julienned
1
fresh red chili, sliced
¼
cup fresh cilantro leaves

Step 1
Bring a large pot of water to a boil. Cook spaghetti or ramen noodles according to package directions. Drain, rinse and add back to pot along with hoisin, soy sauce, rice vinegar, Sriracha and sesame oil; toss to combine.
Step 2
Fill a rimmed baking sheet with warm water. Working one at a time, soak rice paper wrappers in water until pliable; transfer to a clean dry surface. Fill with a scoop of noodles along with a few carrot and pepper slices. Roll, tucking in sides, to create a sealed parcel. Transfer to a serving plate. Continue with remaining noodles and wrappers.
Step 3
Garnish rolls with chili and cilantro. Serve.
