Whether you’re looking for the ultimate summer BBQ side dish or a fun snack to impress at your next game night, these fully loaded baked potato cheesy tots are the perfect mashup of the baked potato flavours you know and love. Classic baked potatoes are swapped out for a base of golden, crispy tater tots — and the results are seriously scrumptious. We like loading the cheesy tots up with all of the classic baked potato toppings, but you could easily top them with chili and cheese, pulled pork, or your favourite nacho toppings.

Preheat oven to 425°F.
Spread tater tots in a single layer on a baking sheet and arrange bacon in a single layer on a separate baking sheet.
Once the oven comes to temperature, place bacon and tater tots in the oven. Bake the bacon for 12 minutes, or until cooked through and crispy. Bake the tater tots for 20 minutes, flipping midway through, or until golden and crispy.
Once the bacon is ready, remove from oven and transfer to a paper towel-lined plate to cool. Once cool, coarsely chop and set aside.
Remove tater tots from oven and set the oven to broil. Transfer tots to an oven-safe serving dish (alternatively, you can keep them on the baking tray and serve directly off of that). Top tater tots with grated cheese, then return to oven for 2 to 3 minutes or until the cheese has melted.
Remove tots from oven and garnish with chopped bacon, green onions, sour cream, salt and pepper to taste. Serve immediately.
