Lady fingers can also be swapped out for ginger snaps.
In a large bowl whip together pumpkin puree, ¾ cup icing sugar, cream cheese, pumpkin pie spice, cinnamon and salt with an electric mixer at medium speed for 2 minutes, or until smooth.
In a separate large bowl whisk cream using an electric mixer until soft peaks form, around 1 minute at medium speed. Stir in ¼ cup icing sugar and vanilla. Continue whipping at medium speed until firm peaks have formed. Set aside until ready to use, cover and refrigerate if needed.
Break ladyfingers into 1-inch pieces. You should have 3 ½ cups of ladyfinger pieces total.
Layer each trifle as follows: ¼ cup lady fingers, 3 tablespoons whipped cream, 3 tablespoons pumpkin filling, 1 tablespoons toffee bits. Repeat one more time. Top with 3 tablespoons whipped cream and 1 tablespoon of Skor bits. Repeat to make 7 trifles. Cover and refrigerate until ready to serve. Best to chill for 2 hours. Can make ahead up to 12 hours in advance.
