Preheat oven to 400°F and line a baking sheet with parchment paper.
Generously rub the chicken thighs with salt, black pepper and paprika.
Place a large 12-inch skillet over medium-high heat and add olive oil. Place chicken thighs, skin side down in the skillet, and sear for 3 minutes, then flip the chicken and sear the reverse side for 3 minutes. Transfer the chicken to the lined baking sheet and roast for 20-25 minutes. If you have a meat thermometer, the internal temperature should be 165°F once fully cooked.
Using the same skillet, reduce the heat to medium and sauté the red onion for 1 minute, then add in coriander, orange juice, sliced oranges, olives and water. Simmer for 1 minute until slightly reduced, and add more water if preferred.
Return the chicken to the skillet and toss to coat chicken with orange and olive glaze. Top with parsley and serve with rice.
