Preheat the oven to 375°F. Line a baking sheet with parchment paper.
Unroll crescent dough onto a clean work surface. Separate into 8 triangles and slice each triangle into thin strips.
Take hot dog, cheese slice and dough strips (one triangle per hot dog). Tightly wrap the dough around the hot dog and cheese, creating a crisscross design. Repeat with remaining hot dogs.
Transfer wrapped hot dogs to the prepared baking sheet. Brush generously with egg wash and sprinkle with flaked salt.
Bake until golden and warmed throughout, about 15 minutes.
Using a toothpick, finish with mustard eyes if desired. Serve immediately!
