Newfoundland Snowballs

If you grew up on the East coast of Canada, you’re definitely familiar with snow. However, Newfoundland snowballs have nothing to do with snow — they’re an iconic treat made of chocolate fudge, coconut and oats that are rolled into delicious balls. We add a little espresso powder to make this classic childhood treat a little more adult-worthy. They’re so decadent, soft and chewy, anyone will enjoy them.

cup milk

cups sugar

cup cocoa powder

cups rolled oats
1 ½
cups unsweetened desiccated coconut

Step 1

In a large pot combine butter, milk and sugar and heat over high. Once mixture begins to foam reduce heat to medium, and continue to cook until a candy thermometer reads 230°F. Remove from heat.

Step 2

Stir in cocoa powder, espresso powder, oats, and half the coconut. Stir to combine.

Step 3

Chill in refrigerator until mixture is firm and cool, about 30 minutes.

Step 4

Once mixture is cool, roll into about 1 1/2-inch balls.

Step 5

Roll balls in remaining coconut. Serve immediately or store in refrigerator.
