Non-alcoholic doesn’t have to mean overly sweet. This booze-free take on the classic Paloma boasts grownup flavors with a hint of heat. This tasty sip features freshly squeezed grapefruit and lime juice delicately sweetened with homemade ginger and jalapeno simple syrup finished with a soda water float. We’re far from Shirley Temple territory here.

Place the sugar, water, jalapeno, cilantro, peppercorns, and ginger in a small saucepan. Bring the mixture to a boil and reduce it to a simmer. Let simmer for 15 minutes.
Strain the sugar mixture into a heat-proof glass or jar and set aside to cool.
Pour the salt and Tajín onto a plate and whisk to combine. Dip two double rocks glasses first in the lime juice and then in the salt and Tajín mixture. Transfer the glasses to the freezer and chill while preparing the rest of the drink.
Juice the grapefruits and lime into a large measuring cup. Strain the grapefruit and lime juice into a mixing glass filled with ice. Add one oz of the cooled simple syrup and stir to combine.
Place a large ice cube in each prepared glass and strain the grapefruit mixture into the glasses. Fill the glasses the rest of the way with the soda water. Garnish the drinks with a grapefruit wedge and a few slices of jalapeño.
