Scallops may seem intimidating but when you know what to do they’re actually quite simple to prepare.

lb(s) (500 g) sea scallops, about 16 pieces
salt and pepper

Tbsp (30 mL) canola oil
1
Tbsp (15 mL) butter

Step 1
Remove the small side muscle from the scallop; discard. Pat dry well with paper towel. Season generously with salt and pepper.
Step 2
Heat the oil and butter in a large heavy-bottom skillet set over medium-high heat until almost smoking. Add the scallops to the pan without crowding.
Step 3
Cook, without disturbing, for 2 minutes or until there is a 1/4-inch (5 mm) crust. Loosen from skillet and turn over. Cook for 1 minute or until browned on the outside but still translucent in the centre.
Step 4
Serve immediately.
