red, yellow or orange tomatoes, thinly sliced
¼
tsp lemon zest
¼
tsp fresh thyme, chopped

Tbsp olive oil
2
sealable plastic bags
4
slices country bread, toasted or not
Mayonnaise, to taste
Salt and pepper

Step 1
On a plate, spread the tomatoes. Sprinkle with the lemon zest, thyme and drizzle with the oil. Season with salt and pepper. Divide in both plastic bags, seal and refrigerate until ready to serve.
Step 2
When ready to serve, spread mayonnaise on the bread slices. Remove the tomato slices from the bags and place on the bread.
