Barbecue Cheddar Dip

shallot (or half a red onion) chopped

large apples, peeled and grated

cup (375 ml) Canadian medium cheddar cheese, grated

tsp (7 ml) chopped fresh sage or ½ tsp (2 ml) dried sage
Salt and freshly ground pepper to taste
Pork Chops

pork chops, butterfly cut

Tbsp (15 ml) butter, melted
Salt and freshly ground pepper to taste

Step 1
Combine all stuffing ingredients and season generously. Top half of each pork chop with 1/4 of the stuffing mixture. Fold the other half over the stuffing and secure with toothpicks.
Step 2
Grease and pre-heat a ribbed cast-iron skillet to medium.
Step 3
Serve with broccoli florets for dipping.
Step 4
When oil has begun to smoke, place chops in skillet. Cover, reduce heat slightly and let cook for 5 to 7 minutes on each side, turning only once.
Step 5
Serve with grilled vegetables.
