Place pork chops in a non-stick frying pan over medium-high heat. When chops are fully cooked and golden brown on both sides (approximately 5 minutes each side), remove from pan and set aside on a dish.
Add butter and brown sugar to the non-stick pan used for the chops. Over medium-high heat cook mixture for 2 minutes until smooth. Add the diced apple and continue to cook for 5 minutes over medium-high heat until apples are golden brown, coated with sauce and caramelized.
In a separate sauce pan add stock, orange juice, apple cider vinegar, orange zest and thyme and simmer gently for 3 minutes.
Arrange hot cooked pork chops on plates, drizzle caramelized apples over pork chops and spoon cream sauce on top.
