Step 1
Preheat oven to 400 degrees Fahrenheit.
Step 2
Season the outside of the meat with pepper and fleur de sel, pressing into the meat with fingers. Tie around the eye of meat with kitchen sting to allow meat to keep its shape during cooking.
Step 3
Heat oil in a large cast iron skillet over medium heat. Add beef to pan and sear all sides until dark brown. Place in preheated oven and allow to cook for 20 to 25 minutes. Turn beef over and add unsalted butter to top of meat along with garlic cloves and thyme. Continue to cook for another 15 to 25 minutes or until desired doneness. Remove from the oven and allow meat to rest for 10 minutes.
