Tbsp (250 mL) vegetable oil

boneless, skinless chicken breast halves
1
jar (440 mL) spicy salsa
¼
cup (50 mL) water
1
cup (250 mL) frozen niblets whole kernel corn
¼
cup (50 mL) chopped green onion
1
cup Black Diamond Mozzarella Cheese, shredded

Step 1

Heat oil in skillet over medium-high heat; brown chicken 2 minutes per side.

Step 2

Reduce heat to medium-low; stir in spicy salsa and water and simmer for 8-10 minutes until done.

Step 3

Stir in corn and green onion and heat through.

Step 4

Transfer chicken breasts to serving plate(s).

Step 5

Spoon salsa mixture over chicken breast, sprinkle with Black Diamond Mozzarella Cheese and let stand just until cheese melts.

Serve over hot cooked rice or pasta.
