lb(s) farm-fresh tomatoes
1
head fresh garlic
1
cup olive oil
½
tsp (each) salt and pepper

tsp Italian seasoning

Notes
You will have to do several batches to get through the box of tomatoes.
Step 1
Preheat oven to 350ºF.
Step 2
Get a RIMMED baking dish.
Step 3
Wash tomatoes and cut into 1/2 or 1/4 depending on the size of the tomato.
Step 4
Place in baking dish…DO NOT crowd.
Step 5
Generously coat with olive oil.
Step 6
Add slices of fresh garlic.
Step 7
Season with salt and pepper.
Step 8
Add 1 tsp Italian seasoning.
Step 9
Roast for 2 hours, stirring several times during the roasting.
Step 10
Place desired amount into freezer bags. ENJOY!!
