Turn your traditional taco night into something a little different. This taco pasta bake takes two things we absolutely love and turns it into a cheesy dish loaded with spices. This family-friendly recipe is the perfect affordable and make head recipe for those busy weeknights.

Bring a large pot of salted water to a boil. Cook pasta to al dente. Strain and set aside.
As the pasta cooks, prepare the sauce. To a heavy bottom pot over medium heat add oil, garlic, onion, pepper and jalapeno. Cook until vegetables soften, about 5 minutes.
Add the ground meat. Season with salt and pepper. Cook until meat is cooked throughout, breaking into small pieces as it cooks.
Stir in the taco seasoning and tomatoes. Bring to a gentle simmer and remove from heat.
Add cheese and pasta. Toss until well combined. Transfer to an oven safe baking dish (if pot is not oven safe), top with additional cheese and bake until heated throughout, about 20 to 25 minutes.
Garnish with sliced jalapeno and green onion. Serve immediately!
