The addition of an egg white gives the drink that perfect frothy “haze” on top. For the lavender syrup, in a saucepan over medium heat stir together the water, sugar, lavender and blueberries.
Bring to a boil and reduce to a simmer. Remove from heat and let stand 15 minutes before straining. Refrigerate until ready to use.
For the hazy lavender cocktail, fill a cocktail shaker with ice. Add the gin, lavender syrup, lemon juice and egg white.
Shake vigorously for 30 seconds. Strain into a stemmed glass an garnish with an edible flower.
