Thai Curry

Tbsp sesame oil
½
cup canola oil

Tbsp mild curry
ground black pepper

tsp ground cumin

boneless, skinless chicken breasts, sliced thin

Tbsp fresh galangal
1
stalks lemongrass, crushed
4
kaffir lime leaves
3
limes, juiced
1 ½
can high fat coconut milk
fish sauce, to taste

bunch cilantro

Tbsp palm sugar, grated

yellow onion, chopped
1
bunch green onions, chopped
1
red pepper, seeded and chopped
2
cup button mushrooms, quartered

handful green beans, cut into 1-inch pieces

ripe mangoes, sliced

pkg rice noodles
Garnish
½
cup cashews, toasted
plain Greek yogurt to garnish
basil to garnish
mint to garnish

Step 1
Heat oils in a wok. Add curry paste, pepper and cumin. Add chicken and stir fry.
Step 2
Cook rice noodles according to directions on the package.
Step 3
Add remaining ingredients and simmer for ten minutes.
Step 4
Serve over rice noodles, garnish with basil, mint, cashews and Greek yogurt.
