Preheat the oven to 350ºF and grease a 9-inch-deep pie plate.
Whisk together the crushed tomatoes and Old El Paso Taco Seasoning that comes in the Old El Paso Soft Taco Dinner Kit. Set aside until ready to assemble.
To a skillet over medium heat, add olive oil and garlic. Cook until fragrant, about 2 minutes.
Add onion, pepper and ham. Cook until vegetables have softened, about 5 minutes. Remove from heat and let cool slightly.
In a small mixing bowl, whisk together the eggs, milk, salt and pepper until well combined.
To assemble, line the greased pie plate with 3 soft tortillas from the Old El Paso Soft Taco Dinner Kit. Layer with a third of the tomato sauce, a third of the ham mixture, and a third of the cheese. Repeat twice.
Slowly pour the egg mixture over the casserole, ensuring it coats the entirety of the pie plate.
