Use any combination of fruit that you like, you need about 3 cups of fruit in total.

sponge cake, homemade or store bought, cut into 1-cm cubes

ripe banana, peeled and sliced

cup raspberries (250 ml)

of cantaloupe, sliced into bite size pieces

cup grapes cut in half (250 ml)

oranges peeled and segmented

cup kirsch or other liqueur (75 ml)
⅔
cup whipping (35 %) cream, whipped (150 ml)

cup ricotta cheese (500 ml)

Tbsp honey (45 ml)
Finely grated zest of 1 lemon
1 ½
tsp vanilla (7 ml)
Cocoa powder, for garnish

Step 1
In a medium bowl, toss together banana, raspberries, cantaloupe, grapes and kirsch. Set aside.
Step 2
In a medium sized bowl combine ricotta, honey, lemon zest, and vanilla. Gently fold whipped cream mixture into ricotta mixture.
Step 3
Place half the sponge cake pieces into bottom of glass bowl (Bowl should hold about 6 cups). Spoon half the fruit mixture evenly over the top. Pour half of the ricotta whipped cream over the fruit.
Step 4
Follow with a second layer of cake and fruit. Top with remaining ricotta whipped cream mixture and spread evenly. Dust with cocoa powder. Serve.
