This cashew-based vegan cheese recipe mimics Parmesan’s signature savoury, salty and cheesy flavour with just five ingredients. Much like cheese you buy in a shaker, it’s powdery and ready to be dusted liberally over a plate of pasta.

Step 1
Combine the cashews, pine nuts, nutritional yeast, salt and garlic powder in a food processor and pulse until the mixture is granular like sand. Transfer to an airtight container and store in the refrigerator for up to 1 month.
