Sweet, salty and spicy; perfect for a picnic!

lb(s) chicken, halved
½
cup fish sauce
½
cup brown sugar

Tbsp lemongrass, chopped
1
Tbsp garlic, chopped
1
Tbsp Sambal Oelek or Sriracha
3
cups cold water

Tbsp soya sauce

Step 1
Mix together all wet ingredients, making sure that sugar dissolved. Pour over chicken and let marinate for 6 hours. Drain and pat dry.
Step 2
Grill over medium high heat until skin is crispy and bird is fully cooked. Alternatively, the chicken can be roasted in oven at 400ºF for 35-45 minutes or until internal temperature of 160ºF is reached.
Step 3
Once cooked, cool and refrigerate. Cut into pieces or leave whole. Can be served from Ziploc bag or containers.
