Notes

There's a 1 hour freezing time.

Step 1

Prep the Mozzarella: Slice each mozzarella ball into 8 thick rounds. Pat them dry with a paper towel to help the breading stick.

Note that it’s best to use mozzarella with low moisture to prevent it from oozing out when hot and help keep the coating crispy.

Step 2

Set Up Breading Stations: Place seasoned flour in one bowl. In a second bowl, whisk together eggs and hot sauce for an extra layer of heat. In a third bowl, pour in your panko breadcrumbs.

Step 3

Bread the Cheese: Dredge each mozzarella round in flour, shaking off excess. Dip into the egg mixture, then press into the seasoned panko to coat well. For extra crispiness, repeat this process for a double coating.

Step 4

Freeze to Set: Dredge each mozzarella round in flour, shaking off excess. Dip into the egg mixture, then press into the seasoned panko to coat well. For extra crispiness, repeat this process for a double coating.

Step 5

Heat Oil: In a deep pan or fryer, heat about 2 – 4 inches of oil to 350°F (175°C).

Step 6

Fry Mozzarella Sticks: Working in batches, carefully drop a few mozzarella rounds into the hot oil. Fry for 1-2 minutes or until golden brown and crispy. Remove and drain on paper towels.

Step 7

Make the Nashville Hot Glaze: In a small bowl, mix paprika, cayenne, garlic powder, onion powder, salt, pepper and brown sugar with 3/4 cup of the hot oil.

Step 8

Glaze and Serve: Dip, drizzle or brush the hot oil glaze over the fried mozzarella rounds for that signature Nashville kick. Serve immediately with ranch dressing on the side to cool things down. Enjoy!

Pro Tips: For milder heat, reduce the cayenne in the seasoning blend. If you want it extra fiery, add a dash more hot sauce to the egg mixture and sprinkle cayenne on top just before serving.
