Spread one side of each slice of bread with apple butter; top 4 slices bread with turkey and cheese and sandwich with remaining bread slices.
In shallow bowl, whisk together milk, mustard, salt, pepper and nutmeg; dip each sandwich to coat both sides and soak up egg mixture.
In a large stick-resistant skillet, melt half of the butter over medium heat; fry, two sandwiches at a time and turning once, until golden, about 5 minutes. Repeat with remaining butter and sandwiches.
Place sandwiches on baking sheet; bake in preheated 400°F (200°C) oven until slightly puffed, cooked through and cheese is melted, 4 to 6 minutes.
Tip: These are equally delectable using replacing turkey with ham, provolone with Swiss cheese, and apple butter with apricot jam.
